Gather all your ingredients. Place your two cookies bottom-side-up on a plate.
Place your pint on its side and hold it firmly. Using a sharp knife (we recommend a serrated knife), slice it into thick slices.
Place a slice of the ice cream pint on top of one of the cookies and top with the other cookie.
Carefully peel the pint packaging away from the ice cream.
Enjoy! (Want to save your sandwich for later? Place it in an airtight container or wrap it in plastic wrap and place it in the freezer.)
